  • 1 Tsp Low Calorie Oil
  • 1 Red Onion
  • 1 Tsp Curry Powder
  • 1 Tsp Paprika
  • 1 Tsp Garlic
  • Salt & Pepper
  • 250g Chopped Tomato
  • 120ml Low Fat Coconut Milk
  • 25g Greek Yogurt
  • 180g Chickpeas
  • 30g Baby Spinach
  • Parsley
Recipe
  1. Add the low calorie oil to the pan and fry the red onion until it starts to go brown. Then, add the seasoning.
  2. Cook the chickpeas as per packet instructions.
  3. Add the chopped tomato, low fat coconut milk, & greek yogurt. Mix well. After, add the cooked chickpeas. Stir everything together.
  4. After that, add the baby spinach &Β parsley.
  5. Servce with rice or naan bread. Enjoy!
