- 1 Tsp Low Calorie Oil
- 1 Red Onion
- 1 Tsp Curry Powder
- 1 Tsp Paprika
- 1 Tsp Garlic
- Salt & Pepper
- 250g Chopped Tomato
- 120ml Low Fat Coconut Milk
- 25g Greek Yogurt
- 180g Chickpeas
- 30g Baby Spinach
- Parsley
Recipe
- Add the low calorie oil to the pan and fry the red onion until it starts to go brown. Then, add the seasoning.
- Cook the chickpeas as per packet instructions.
- Add the chopped tomato, low fat coconut milk, & greek yogurt. Mix well. After, add the cooked chickpeas. Stir everything together.
- After that, add the baby spinach &Β parsley.
- Servce with rice or naan bread. Enjoy!
